Inspector's notes

Milk and almond milk found with internal temperatures of 50*F and 54*F inside cooler near front entrance rinse sink. The milks were also observed sitting on the counter upon inspector's arrival. PIC stated the milks had only been out on the counter for less than 15 minutes and placed them back in the cooler for cooling and continued cold holding. Cold held TCS food items must be maintained below 41*F. Discussed possible use of ice baths or time as a control during rush periods when milks must be accessed frequently. PIC will monitor and ensure milks are cooled to 41*F or below prior to 12:20 PM or they will be discarded. Corrective Action: Corrected at time of inspection.
