Observed raw chicken and raw shrimp stored above ready-to-eat sauces in the walk-in refrigerator. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Corrective Action: Corrected at time of inspection. This is a 3rd time repeat violation.

Observed fried chicken and cooked BBQ pork without date mark in the walk-in refrigerator. PIC stated the fried chicken and cooked BBQ pork were prepared 2 days prior to inspection. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). PIC put proper date mark on fried chicken and cooked BBQ pork at time of inspection. Corrective Action: Corrected at time of inspection.

Observed fried chicken, fried eggroll, cooked beef, cooked pork, raw cut cabbage placed on food prep bench with internal temperature between 65*F to 67*F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Manager stated the above food were taken out from walk-in refrigerator less than one hour prior to inspection. Manager moved the above food back to walk-in refrigerator for fast cooling at time of inspection. Corrective Action: Corrected at time of inspection.

Observed accumulation of food debris around the kitchen and in the 3-compartment sink area as well as a large collection of cardboard boxes. Food debris and glue from the cardboard can attract pests. Recommend disposing of excess cardboard and cleaning kitchen more frequently and thoroughly to minimize food sources for pests. Physical facility must be cleaned frequently enough to prevent accumulation of dirt, organic matter, and food debris. Must clean physical facility prior to next routine inspection. Observed cartons of raw eggs stored above ready to eat foods such as cooked and cooled noodles, sugar snap peas and sliced carrots and zucchini in the walk-in cooler. Person in charge relocated the raw eggs on the bottom of the storage rack according to their final cooking temperatures.
