Predefined Comment: No County legal action will result from this inspection.Of Note: Observed several large containers of coffee being held in the walk-in cooler without date-marking. Per PIC, they do not "cook" or hot brew their coffee so they do not need to date-mark the product. The operator stated that they received guidance from a past inspector indicating that they can hold cold-brewed coffee up to 3 weeks. Unless Maricopa County receives Laboratory testing results from an independent third-party laboratory indicating that the food/beverage product in question is Non-TCS, Maricopa County requires that all Time/Temperature Controlled for Safety (TCS) and Ready-To-Eat (RTE) foods must be labeled with the date within 24hrs after preparation. All TCS/RTE foods must be sold/discarded within 7 days. (Day 1 is preparation, then an additional 6 days to sell or discard the product, 7 days total.) Ensure all product is labeled with the date 24hours after preparation and sold/discarded within 6 days immediately following the date of preparation.
