Jalapeno cheese sauce found at internal temperature of 123*F in food warmer. Per food employee, cheese sauce has been reheating for 1.75 hours from initial cold holding source. Temperature of hot holding unit increased. At 2.0 hours of reheating, internal temperature of cheese sauce at 147*F. TCS food must be reheated to 165°F for 15 seconds and shall be done rapidly (does not exceed 2 hours). Cheese sauce was embargoed (see embargo sheet). ----------- Food employee discarded cheese sauce in food warmer at time of inspection and opened new can of cheese sauce. Assure foods are properly reheated to proper reheating temperature within 2 hours prior to hot holding. Correct By: Corrected At Time Of Inspection
