Inspector's notes

-- Chlorine concentration undetectable on dishes in low temp sanitizing dishwasher. Reviewed the required specifications of 50ppm-100ppm with the PIC. Dishwasher unable to be repaired after priming at the time of inspection. The person in charge (PIC) stated they will use main kitchen to wash, rinse, and sanitize dishes. Requested an "Out of Order" sign be placed on equipment until repairs are completed at the time of inspection. Please ensure employee are utilizing test strips to verify dishes are getting properly cleaned and sanitized. Corrective Action: Corrected at time of inspection.

Inspector's notes

-- In electric steam table, cooked green beans with carrots and carne asada had internal temperatures ranging between 94°F-110°F. The person in charge stated the items had been in unit for approximately 1.5 hours. The person in charge turned up temperatures on steam table at the time of inspection. All TCS foods improperly hot held were reheated to 165°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above.

Inspector's notes

Observed cooked chicken, cut melon, cooked chickpeas, and cooked peeled hardboiled eggs at 48-50'F in reach-in cooler. Per PIC, items were placed in cooler day prior to inspection. All TCS foods improperly cold held were discarded by PIC at time of inspection. Cooler was holding with ambient air temperature of 42'F. PIC contacted maintenance and cooler was repaired at time of inspection.
