Core-3-501.15 (B), C: Cooling Methods; Cooling containers: Observed vegan chicken flautas being cooled in the refrigeration unit in the kitchen. Three trays of flautas from 02/23, 02/25, and 02/27 were being stored resting on top of each other and sealed with plastic wrap and a lid. Employee stated that the flautas were prepared 40 minutes prior to inspection. Employee separated the container and removed the lid and plastic wrap. Ensure foods that are being cooled are not stacked or sealed with a lid/ plastic wrap to allow adequate ventilation for cooling.
