Observed unlabeled zip-seal bags of cubed craft ice in reach-in under-counter freezer in bar area. A manager provided an invoice for the ice. The address on the invoice is not affiliated with an active Maricopa County permit. Please ensure all food products served and stored in the establishment are purchased from approved sources. Observed deep covered container of cooked pepper and onion mixture in reach-in refrigerator with an internal temperature of 55 degrees Fahrenheit. Per person in charge (PIC), mixture was prepared on the day before the inspection and cooled down using ice wands initially before transferring to this container and placing in reach-in refrigerator. Please ensure cooling foods are cooled from 135F to 71F within 2 hours and from 70F-41F within an additional 4 hours. PIC voluntarily discarded mixture during inspection to correct. See embargo form. For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4617/AMC-Toolbox---Cooling. >>> Observed the following food items in deep containers: birria cooked by the restaurant at 49-50'F, and salsa verde at 49-50'F in the 4-door standing cooler. Per PIC, the birria was cooked 1 day prior to inspection and the salsa verde was cooked over 4 hours prior to inspection. Both food items were embargoed at the time of inspection. Cooked foods must be cooled from 135-70'F in the first 2 hours and from 70-41'F in the next 4 hours for a total of 6 hours of cooling. Discussed the importance of proper cooling with the PIC. Also discussed the use of shallow containers to facilitate proper cooling. Provided cooling handout to the PIC. :
