Observed container of pre-portioned red salsa (<1lb) being stored in reach in refrigeration unit bearing the date "2/29/24". The employee did not know when the food was prepared but suggested that it may have been made more recently and the date marking tag was not updated to reflect that. Leak occurred when water was being drained from the sink. Improper repair of maintenance of any portion of the plumbing system may result in potential health hazards, such as cross contamination, backflow, or leakage. Per PIC, items were reheated and placed in the containers less than 2 hours prior to inspection. Both items were reheated to 165'F at the time of the inspection. Discussed proper hot holding with the PIC. All food held hot must be maintained at 135'F or above at all times.
