Predefined Comment: RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). The freezing date and the thawing date must be put on the container along with the preparation date as an indication of how many of the original seven days have been used. After discussion with the person in charge it was determined the salsa, quiche, farro, and ham were frozen on the date of preparation dates and thawed on 3/21. After discussion with the person in charge it was determined the tomatoes were prepared on 3/19 instead of 1/19. Predefined Comment: All RTE/TCS foods were properly date marked at the time of inspection. Corrective Action: Corrected at time of inspection.
