Observed low temperature sanitizing mechanical dish machine being used to sanitize silverware, plates, and cambros at time of inspection. Final rinse chlorine sanitizer concentration measured at 0 PPM. After running the dish machine three more times the final rinse sanitizer concentration measured at 0 PPM each time. Acceptable final rinse chlorine sanitizer concentration shall measure between 50-100 PPM. PIC made a service call at time of inspection. Establishment will utilize three compartment sink or bar dish machine to sanitize food contact surfaces until the dish machine is repaired and supply a final rinse chlorine sanitizer concentration of 50-100 PPM.

According to manufacturer instructions quaternary ammonium concentration shall range between 150-400 PPM. Discussed approved use of sanitizers with the person-in-charge (PIC). Sanitizer must be used at concentrations and in an approved manner per manufacturer instructions, 40 CFR 180.940, and 40 CFR 180.2020. PIC remade sanitizer bucket at time of inspection and it tested at 200 PPM. Corrective Action: Corrected at time of inspection. Repeat Violation: 2nd.

Observed small cooler under the soup station with an ambient temperature of 63*F. The cooler contained portions of butter. Product temperature measured 55*F with inspector probe thermometer. Chef had staff member move to different cooler at time of inspection. Discussed with Chef that all coolers should be maintained at 41*F or below when cold holding TCS foods. Corrective Action: Corrected at time of inspection.

Observed 3 tubs of prepared chicken salad and 1 tub tuna salad. Chicken and tuna salad was dated 8/5/23, date of inspection was 8/8/23. Chicken salad measured 44-45*F with inspector probe thermometer, tuna salad measured 45*F. Chef removed and voluntarily discarded at time of inspection.
