Observed chef crack raw unpasteurized raw shelled eggs into a pan with gloved hands. Then without first washing their hands observed the chef continue cooking an omelet, touch handles of pans and spatulas, and handle a clean plate.

Predefined Comment: Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks. Employee properly washed hands at handwash sink at time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed whipped butter in bowls in shallow ice bath with internal temperatures measured between 55-61*F. According to the PIC the butter is discarded after service ends at 1PM. No discard times observed and written policy for time as control was not available for review.
