Chicken wings in steam table at servery prep with an internal temperature of 114-145*F. Water level at steam table was about 1 inch. Person in charge mentioned foods were placed in the unit within 1 hour prior to inspection. All hot temperature-controlled foods should be held at 135*F or above. Person in charge added water to steam table and reheated wings to reach internal temperature of 175*F to hold at 135*F. Recommended monitoring water levels on steam table to maintain proper hot holding temperatures. PRIORITY VIOLATION-3-501.16(A)(1) - Priority: Time/Temperature Control for Safety Food, Hot Holding. Sausage patties tightly wrapped and sealed in ziplock bags, in top compartment of cold holding unit with an ambient temperature of 60*F. Person in charge stated foods were used for prep within one hour of inspection and was actively cooling. All temperature-controlled foods in an active state of cooling should be loosely sealed and, in a unit, designed for cooling. Person in charge voluntarily discarded on own accord. 3-501.15 (B) - Core: Cooling Methods; Covered and Properly Arranged Containers. Inspector's notes
Tuna salad, chicken salad, boiled eggs, roast beef and sliced American cheese observed with internal temperature range of 50-51*F while being cold held inside the reach in cooler near the cold prep station. The ambient temperature of the unit was also 50*F according to the refrigerator thermometers inside the unit. All TCS foods improperly cold held were discarded by PIC at time of inspection. PIC submitted a work order for the unit and advised staff not to store temperature sensitive foods until unit can hold below 41*F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.
