Inspector's notes

Salad products were stocked at the salad bar at the bistro while unit was turned off. Person in charge turned the unit on at time of inspection. Pasta salad, shredded cheese, and cut tomatoes had an internal temperature range of 43-46*F. PIC stated that products were stocked no more 30minutes prior to inspection time. All products were relocated back to the walk-in cooler to rapidly cool. Cold holding equipment must hold an ambient temperature of 41*F or below to ensure proper cold holding of TCS products. The unit was later observed below 41*F after being turned on. Corrective Action: Corrected at time of inspection.

PRIORITY VIOLATION-4-501.114, P: Manual and Mechanical Warewashing Equipment, Chemical Sanitization- Temperature, pH, Concentration and Hardness. There were dishes being actively washed at time of inspection. Person in charge advised staff to utilize the 3 compartment sink for sanitizing. The sanitizer dispenser at the 3 compartment sink was dispensing proper quat concentration (200-400ppm). Person in charge stated they will submit a work order for the dish machine and continue using quat sanitizer for dishes until dishwasher can yield a final rinse temperature of 160*F or above. The final rinse water temperature must be 160*F or above when it comes in contact with dishes in order to properly sanitize. Correct By: Corrected At Time Of Inspection
