Inspector's notes

Observed two containers of cooked rice in prep cooler at 50°F and 70°F. PIC stated that it had been taken out of the walk-in cooler and left out at room temperature for around 40 minutes, then put in prep cooler about an hour prior to inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. All TCS foods improperly cold held were voluntarily discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed cooked white rice, stewed red beans and rice, and cooked collard greens in steam table with internal temperatures of 110-117 degrees Fahrenheit. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Per person in charge (PIC), items were placed in steam well less than 2 hours prior to inspection. All TCS foods improperly hot held were reheated to 165°F at time of inspection and temperature setting of steam table was increased. Inspector verified temperature. Corrective Action: Corrected at time of inspection.
