Reviewed MCESD requirements with the person in charge (PIC): materials that are used in the construction of utensils and food-contact surfaces of equipment shall be durable, corrosion-resistant, and nonabsorbent; sufficient in weight and thickness to withstand repeated warewashing; finished to have a smooth, easily cleanable surface; and resistant to pitting, chipping, crazing, scratching, scoring, distortion, and decomposition. Observed baked cod, chicken, and cooked spaghetti in hot holding unit at an internal temperature ranging 94-111*F. Cook stated food was cooked and left to cool for 15 minutes, within 30 minutes of inspection, and placed in hot holding unit. Power to the unit was not on. Cook turned on unit, removed foods, and placed in steamer, reheated to 165*F, and placed back in hot holding unit. PRIORITY VIOLATION-3-501.16(A)(1) - Priority: Time/Temperature Control for Safety Food, Hot Holding.
