Handwash sinks must be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. Facilities must be maintained in a condition that promotes handwashing. PIC provided hand drying provision for handwash sink at time of inspection. Corrective Action: Corrected at time of inspection.

#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed multiple TCS/RTE food items (whole milk, fat free milk, 2% milk, egg bites and heavy whipping cream) with an internal temperature of 57 F stored in the standing fridge at an ambient temperature of 60 F located near dry storage area of establishment. PIC was unaware of fridge temperature or when items were placed out of temperature control. Ipad application connected to the standing fridge indicated that the temperature started increasing around 8 am. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Observed standing fridge located near dry storage area with an ambient temperature of 60 F at the time of inspection. Per PIC, Ipad indicated fridge temperature started rising around 8 am today. This is the main cold holding unit for dairy products in the establishment. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below prior to re-inspection on 10/17/25. Corrective Action: Correct prior to re-inspection.

Person in charge was aware of that cold holding unit having higher temperatures but still had time/temperature control for safety (TCS) foods in the unit. Discussed the importance of having all cold holding units being able to keep an ambient temperature of 41*F or below to prevent bacterial growth of TCS foods. Please do not store any TCS foods in unit until it is working properly. Reinspection will be conducted within 10 days. Correct By: Correct Prior To Reinspection
