Inspector's notes
Observed various cream cheese schmears, cut tomatoes, smoked salmon/lox, smoked/sliced ham and turkey, pre-cooked bacon, smoked beef brisket, dairy half-and-half, pre-cooked egg white and egg patties, dairy butter, various cheeses (cheddar, shredded, parmesan), and milk in establishment walk-in between 44*F-51*F. Ambient air temperature of walk-in was at a minimum of 47.8*F, via min/max probe thermometer. Establishment performed a line check at approximately 4:30AM that morning and stated walk-in temperature was at 33*F-41*F via both built-in walk-in thermometer and hanging air dial thermometer inside walk-in. Per person-in-charge (PIC), dial thermometer had not been calibrated recently and food temperatures in walk-in are not normally checked during line checks. TCS items that were placed in walk-in within 4 hours (milk, some cream cheese schmears, and cheese) were moved to the freezer and other alternative refrigeration to rapidly cool to 41*F at time of inspection. Per PIC, all other TCS food items had been in walk-in since at least the day prior, up to 6/13. All TCS food items that had been in walk-in for over 4 hours were voluntarily discarded by PIC (see embargo). Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Discussed with PIC implementing food temperature checks in walk-in into daily line check routine. Corrective Action: Corrected at time of inspection.

Observed establishment walk-in refrigerator with a minimum ambient air temperature at 47.4*F at time of inspection. TCS food items in walk-in were at 44*F-51*F. TCS items placed in unit within 4 hours were relocated to alternative refrigeration, and all other TCS products kept over 4 hours were discarded. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Establishment was able to repair walk-in refrigerator, where air temperature of walk-in was observed to be at 40.8*F at end of inspection. Corrective Action: Corrected at time of inspection.
