Inspector's notes

Observed a pizza cutter wedged between two preparation tables back of house on the cook line. In use utensils must be stored in a clean, dry location; in running water; or in hot water above 135°F. If utensils are stored in food, the handles must be stored above the surface of the food. PIC stated that they lay the cutter flat on the table between uses. All in-use utensils were properly sent to the mechanical warewashing station to be washed, rinsed, and sanitized at time of inspection. Corrective Action: Corrected at time of inspection.

Observed a dead Cockroach in a sticky trap located in the employee restroom back of house. PIC was made aware and removed the trap with the dead roach inside and properly disposed of it at time of inspection. Verified with PIC that a licensed pest control company comes out to spray. Corrective Action: Corrected at time of inspection.

Observed three metal tongs being set on the top of the stainless steel square metal containers in-between uses. In-use utensils must be stored in a clean, dry location; in running water; or in hot water above 135°F. If utensils are stored in food, the handles must be stored above the surface of the food. PIC stated that they will use a stainless steel square metal container in one of the steamers for storing in use utensils. All in-use utensils were properly went to the mechanical warewashing station to be washed, rinsed, and sanitized at time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed beef tacos (51°F) and rolled meat and cheese tacos (50-53°F) cold holding above 41°F in the bottom of the middle prep table. Alerted staff who stated the food had been in the unit for less than 3 hours. Staff put the metal bins of Time Temperature Control for Safety (TCS) foods in ice baths at the time of inspection. It was also determined that the temperature dial at the bottom of the unit had been inadvertently set to a hotter setting. Staff adjusted the dial to a colder setting at time of inspection. Adequate alternative refrigeration is currently available to continue operating safely. Discussed the importance of routine cold holding food temperature checks. Discussed cold holding requirements with staff. Corrective Action: Corrected at time of inspection.
