Inspector's notes
In open top prep fridge, observed a container of chopped cabbage 50°F, bean sprouts 51*F, previously canned bamboo 47*F, previously canned pineapple 48*F at the time of inspection. Also observed in the walk-in cooler cooked chicken 46-48*F, raw chicken 46*F, TCS soup 45*F, bean sprouts 48*F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. After discussion with the person in charge it was determined all TCS foods in cold table were restocked from the walk in refrigerator around 11AM. PIC added ice to items in cold table. Per PIC, TCS foods in the walk-in cooler had been in temperature when the PIC checked at 11am however the establishment received a delivery and the walk-in cooler was left open at 1pm. PIC turned down walk-in cooler temperatures at the time of inspection and calibrated min/max thermometer read 37.5*F at the time of inspection. Corrective Action: Corrected at time of inspection. Consecutive repeat violation: 2nd.

After discussion with the person in charge it was determined the dumping were cooked around 10:00 AM today. The open top portion of refrigerators are not designed to rapidly cool TCS foods.

Observed frozen duck thawing in standing water in rear prep sink. Discussed proper thawing methods with the person in charge. All foods being thawed from frozen must be thawed in an approved manner. When thawing TCS foods in water they must be completely submerged under running water that is 70*F or cooler. Water must have sufficient velocity to float off loose particles. The faucet was turned on at time of inspection so water flowed at a sufficient velocity to float off loose particles. Corrective Action: Corrected at time of inspection.
