A reinspection will occur on or prior to 8/8/2025 to verify the correction of Violation #36.No County legal action will result from this inspection.Of Note: Observed barrel power washer in the back warehouse area being used to mechanically wash and chemically sanitize large barrels used to store large quantities of tomato sauce. Observed submerged water inlet on the equipment. The unit requires the installation of a Reduced Pressure Zone (RPZ) backflow preventor meeting ASSE 1013 requirements on the water supply line to provide isolation for the equipment and to ensure contamination does not occur. The RPZ must be tested and certified after installation. Ensure relief port drainage is routed with a rigid drain line to a floor sink. Also observed logging requirements for food temperatures at the cooking/cooling/refrigeration/freezing/thermometer calibration/vacuum packaging/transportation phases of the process not filled out properly at time of inspection. Provide accurate logs once per week over the next 30 days to ensure the HACCP plan is being followed. Provided vomiting/fecal written procedure guidance to PIC.

Observed facility provided probe thermometer reading 40'F after 3-5 minutes of calibration within ice water. Discussed the need for all thermometers being used to record food temperatures to be accurate within 2 degrees. Properly calibrated probe thermometers are required at all times for monitoring food temperatures. Must provide a probe thermometer for establishment prior to re-inspection. A reinspection will occur on or prior to 8/8/2025 to verify the correction. Corrective Action: Correct prior to re-inspection.
