Spoke to General Manager of Operations, Ivey R. regarding food operations at facility, including the food cart being stored outside/behind the facility. Food cart was locked/sealed during previous routine inspection. Verified with GM that cart is unpermitted but remains locked when not in-use and is only operational when the outside caterer, [FD-61114] is present/onsite. Caterer operates at the cart using their catering permit only.Discussed general expectations for the outdoor food cart, such as having a hand sink onsite and available when in operation and contingencies for when the weather prevents safe food handling. Also reviewed the responsibility of food storage and dry goods when caterer is not onsite. Management will contact inspector and/or department if operational changes occur for the food cart in the future.
