Discussed with operator to ensure TCS (time/temperature control for safety) food items to be maintained at hot holding unit minimum 135*F or above. Per operator chiles rellenos were made less than 1hour prior. Operator proceeded to reheat chiles rellenos to 165*F. All other TCS food items in hot holding unit verified at 135*F or above. Corrective Action: Corrected at time of inspection.

First compartment was empty, Middle compartment included both soap and sanitizer Chlorine 100ppm and last compartment included water. Educated operator on proper warewashing setup at thee compartment for wash, rinse and sanitize. Operator was able to properly setup three compartment sink at time of inspection. Corrective Action: Corrected at time of inspection.
