PIC noticed the issue about a week ago and stated that a work order has been placed for the issue. Discussed repair timeline with PIC. All equipment must be maintained in good repair at all times. Repair all equipment to a state of good repair prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.

Inspector's notes

Observed the following TCS food products being stored inside the walk-in cooler: Grilled chicken strips, breaded chicken strips, sliced tomatoes, lettuce, and egg rolls, all measured between 49-54'F via probe thermometer at time of inspection. Ambient internal air temperature of walk-in cooler was 52.8 via min/max thermometer (See Violation #33). PIC was unsure when the prepped food items were placed within the walk-in cooler. The egg rolls located in the walk-in had already thawed. Discussed the importance of maintaining a temperature log for the walk-in cooler to prevent temperature abuse with PIC. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed walk-in cooler with an ambient internal temperature reading of 52.8'F at time of inspection. All TCS food products within the unit were measured at 49-54'F, and were embargoed at time of inspection (See Violation #22). PIC placed a service request immediately and will have the unit repaired prior to using it for TCS food storage. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. A reinspection will occur on 4/17/2026 by 3PM to verify the correction. Corrective Action: Correct prior to re-inspection.
