Observed wiping clothes stored in quat ammonium less than 150 PPM. PIC filled bucket from the 3 compartment sink to the to approved ppm. Quat ammonium must have a concentration according to the manufactures specifications for sanitizing food contact surfaces. Corrective Action: Corrected at time of inspection.

#16 — Food-Contact Surfaces: Cleaned and SanitizedPriority4-501.114

Inspector's notes

Observed sanitizer at the 3 compartment sink had a concentration of 0PPM for quat ammonia. Per PIC, he was not sure how long the sanitizer had been in the 3 compartment sink. PIC drained the water and re-filled the 3 compartment sink at time of inspection. Checked new sanitizer in the water, and it had a concentration of less than 150PPM. PIC called the owner and inform him to call maintenance to service the dispenser of the sanitizer at the 3 compartment sink. PIC drained water again, filled with new water, and poured quat ammonia solution until it was the with correct concentration. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. Food-contact surfaces sanitized using quaternary ammonia must have the proper concentration according to manufacturers specifications. Corrective Action: Corrected at time of inspection.
