Establishment is reduced oxygen packaging red chile, mole and green chile prepared onsite and holding (freezing for over 48 hours). Observed multiple frozen packages with dates varying from February to April in reach-in freezer next to ROP machine. PIC discarded ROP packages. A variance/HACCP must be obtained prior to conducting any specialized processes. Predefined Comment: When food-contact surfaces are being sanitized with hot water in a dish machine, the surface temperature must reach at least 160°F as measured by an irreversible registering temperature measuring device to destroy pathogens that may remain on such surfaces after cleaning. The person in charge placed a work order for service and set up the three compartment sink for manual warewashing and sanitizing. Corrective Action: Correct prior to next routine inspection.
