Observed cheddar, American, Swiss cheeses and country pepper spread out of temperature at 47-48 degrees. Per PIC the items were held in reach in over night. Discussed with PIC the importance of cold holding temperatures, proper cold holding temperatures are 41 degrees F or less. PIC discarded the items at the time of inspection. Observed pallet of eggs on the prep counter without a proper indicator of the when they will be discarded or used by. Per PIC eggs have been there for approximately 40 minutes. Informed with PIC the need for a time indicator of when the eggs will be discarded. PIC then put a time indicator for the eggs. Correct By: Corrected At Time Of Inspection
