Inspector's notes

Observed Cheese, Lettuce and tomatoes in prep table at 49-50*F. Items had been in unit less than three hours since opening per review of logs. PIC stated unit temperature dial may have been inadvertently turned to a warmer setting. PIC immediately lowered unit temperature settings and will monitor product temp for rapid cooling. PIC will utilize double ice panning to rapidly cool and maintain foods below 41*F or below.

Inspector's notes

Diced Chicken and Cheese in prep cooler at 46 degrees. PIC indicated the prep cooler was stocked at 6am within three hours. Upon inspection cooler was running at 40 degrees and at time of inspection PIC turned cooler down to 36 degrees to rapidly cool. Recommend using metal pans instead of plastic to conduct the cold better in prep surface cooler. Corrective Action: Corrected at time of inspection.
