Inspector's notes

Observed bean sprouts and chopped cabbage at 54F in a prep cooler. Also observed cut lettuce and cut cabbage at 47-49F in the same cooler. The unit was holding 50F. PIC moved the products to another cooler, as they were prepared an hour prior. Also observed a green chili sauce cooked with peppers, garlic and plant foods in oil. The sauce was 68F. PIC placed it into an ice bath, as it was taken out at 11am. TCS food items must be stored at 41F or below when cold holding. Corrective Action: Corrected at time of inspection.
