Inspector's notes

Observed sliced tomatoes, sliced deli meats, various cheeses, chicken salad, tuna, and shredded lettuce in walk-in cooler with ambient temperatures ranging from 53-59*F; walk-in cooler had an ambient temperature of 59.7*F. Per PIC walk-in temperature was checked around 9:30am and was at 34*F. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.

PIC notified a repair technician to service the unit at time of inspection. Reviewed cold holding equipment requirements with the PIC to ensure foods can be held at or below 41°F. Walk-in cooler fixed at time of inspection, ambient temperature measured at 41*F. Corrective Action: Corrected at time of inspection.
