-- Multiple slices of ham observed in plastic container inside warming drawer with internal temperatures ranging between 110°F-115°F using probing thermometer. An employee stated the ham was removed from cold holding and placed on grill approximately 15 minutes prior to the inspection. At the time of inspection, the ham was reheated to 165°F and placed directly inside warming drawer. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Corrective Action: Corrected at time of inspection.

#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Walk-in found with internal ambient temperature of 48*F. PIC stated the walk-in's temperature was last checked at 4:00 AM today and it was at 38*F. PIC also stated they had been doing inventory periodically until about 10:00 AM in the walk-in and left the door open sometimes. TCS food items such as sliced tomatoes, cut lettuce, cooked chicken, and egg rolls were found with internal temperatures of 45-46*F. PIC discarded the TCS food items cold holding above 41*F (see embargo form). Other items such as tacos and spicy chicken strips were still partially frozen from the freezer and were moved back to the freezer for continued cold holding. PIC contacted repair technician for repairs to the walk-in. The walk-in will not be use for cold holding TCS food items until it is repaired/replaced and able to maintain an ambient temperature of 41*F or below. Corrective Action: Corrected at time of inspection.

#20 — Proper Cooling Time and TemperaturesPriority3-501.14

Inspector's notes

Cut lettuce found in containers in walk-in with their lids squarely on top and some were stacked together. The ambient temperature in the cooler and air blowing out of the unit was 45*F at the start of the inspection and the internal temperature of the lettuce was between 43-48*F at 10:30 AM. Temperatures verified with both PIC's and inspectors calibrated probe thermometers. The lettuce began cooling at 6:00 AM today. PIC discarded the lettuce. Please ensure cooling TCS food items are monitored during cooling, best methods for cooling are employed, and required cooling temperatures and time frames are met. Ambient temperature of the cooler and air coming of the unit was at 40*F and 37*F respectively by end of inspection. Discussed monitoring of the walk-in with PIC. Corrective Action: Corrected at time of inspection.
