Inspector's notes

Observed various Time/Temperature Control for Safety (TCS) food items including milk, eggs, and burritos registering internal temperatures ranging from 52°F-54°F. Per manager, the perishable food items had been in the refrigerator for more than 4 hours. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. The manager voluntarily discarded the food items at the time of inspection. Corrective Action: Corrected at time of inspection.

Observed jugs of milk in reach-in refrigerator in back storage area with internal temperatures of 54-57 degrees Fahrenheit. Please ensure time-and-temperature control for safety (TCS) foods are kept cold at 41F or colder. Per manager, milks were purchased and placed in refrigerator during the previous business day. Milks were stored in reach-in refrigerator that was measured with ambient temperature of 53F with min-max thermometer. Person in charge (PIC) voluntarily discarded milks during the inspection to correct. See embargo form. Correct By: Corrected At Time Of Inspection
