Inspector's notes

Observed sliced swiss cheese on the counter under time control. Employees put new stickers on the foods, but kept the same foods in that location. Swiss cheese had been out on board since 120pm, but new stickers added to were inaccurate, and allowing for the food to be out until after 7pm (6 hours total). Manager had employees put old/accurate stickers on the TCS food products while out on the counter. Talked to manager about policy. Ensure that timestamps are used accurately and TCS foods are used up or throw out within 4 hours of pulling from the fridges. Corrective Action: Corrected at time of inspection.
