Observed employee throw away parchment and dip hand into trash can then change gloves and go back to prepping cookies without washing hands at time of inspection. Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks. Employee properly washed hands at handwash sink at time of inspection. Corrective Action: Corrected at time of inspection.

Observed butter on prepped table with temperatures of 67*F at time of inspection. Per person in charge (PIC), establishment pulled the butter out the night before for today's use - longer than 4 hours prior to inspection. Butter was embargoed at time of inspection. Discussed process and procedures for butter softening and that butter pulled for baking needs to be part of a continuous supervised process. Discussed proper cold holding with the PIC. All TCS foods held cold must be held at 41*F or below at all times.
