Inspector's notes

At time of inspection, observed waste water in the mop sink, located in the back of the kitchen, not draining. Currently the waste water is contained within the mop sink basin. PIC is aware of the problem and contacted the owner to correct the issue. At time, ran all the water in the establishment, and did not observed any backflow from the mop sink or any floor drains. Explained to PIC, if at any time when trying to get the mop sink to drain that if the water starts backing up into the sink, floor drains, or establishment; that the establishment will need to be closed. A re-inspection will be conducted in 24 hours to ensure that the mop sink is draining properly and has no standing water. Discussed MCESD's 24 hour re-inspection policy regarding improperly conveying sewage. Corrective Action: Correct prior to re-inspection 10/2/2025.

At time of inspection, observed dish machine with a sanitizer concentration of 0ppm for chlorine. The sanitizer bucket for the machine was empty, and PIC changed out the bucket. After priming the dish machine, with the new bucket attached, dish machine had a proper concentration range for chlorine. Instructed PIC re-wash any dishes that were ran through the dish machine on the day of the inspection. Chlorine must have a concentration between 50-100 ppm for sanitizing food contact surfaces.
