Observed speed rack with breads stored in front of and blocking access to hand sink located in catering prep area. PIC moved the speed rack to a proper storage area at time of inspection. Hand wash sinks must be accessible at all times to allow for proper hand washing and may only be used for hand washing. Corrective Action: Corrected at time of inspection.

Observed ambient temperature of tabletop prepcooler unit located by warewashing entry area; measured 55.9'F. Observed ambient temperature of reach-in unit located opposite of hotholding unit in the main kitchen; measured 47.6'F. Both units were emptied of TCS food items at time of inspection. PIC agreed to not use units until fixed. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. Re-inspection scheduled on 08/11. Corrective Action: Correct prior to re-inspection.

Inspector's notes

Observed chicken Cesar wraps (cooked chicken), veggie sandwiches (cut tomatoes), overnight oatmeal, cheddar cheese, and hard boiled eggs having internal temperatures of 46-48* F in a cold holding unit. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.
