Inspector's notes

Observed cooked chicken and cooked tofu 45-51'F stored at ambient temperature cooling rack, prepped and portioned less than an hour prior. Items observed not in active preparation and observed unattended. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Informed PIC to instruct food employees to store items in coldholding capacities once preparation is done to ensure food items are within proper coldholding temperatures. Avoid leaving TCS food items unattended at ambient air temperature. Corrective Action: Corrected at time of inspection.

Observed cooked pasta (58'F) in deep, covered pan being cooled in banquet walk-in unit. Observed salad mix (51'F) tightly wrapped in Saran, in banquet walk-in unit. Items within proper cooling parameters. Avoid tightly wrapping cooling food items to support proper air flow and to avoid trapping heat. Use shallow pans to optimize proper cooling practices. PIC uncovered food items at time of inspection. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Corrective Action: Corrected at time of inspection.
