Inspector's notes
Observed a large metal pot of cabbage soup with an internal temperature of 47-49*F. Internal temperature registered with an internal probe thermometer. Per PIC the cabbage soup was cooked the night before and then placed in the walk-in to cool over night. Educated PIC that Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. All TCS foods improperly cooled were discarded by PIC at time of inspection. Corrected at time of inspection.

No County legal action will result from this inspection.Discussed with PIC the usage of reduced oxygen packaging (ROP) w/o a variance for cooked then cooled meats. Provided education, guidance documents, and provided regulations for continuing process. If the ROP process ever conducted outside requirements for variance approval, then a variance will need to be applied for.
