Inspector's notes
Observed a prep refrigerator measuring with an ambient temperature of 54 degrees F. Shredded beef tacos had been stored in the refrigerator for more than 24 hours and measured with an internal temperature of 58 degrees F. All other TCS items stored in the refrigerator had been prepped within the past 3 hours and were moved to alternative refrigeration. The shredded beef tacos were discarded at time of inspection. Discussed cold holding. Alternative refrigeration available to operate safely. The prep refrigerator will not be used to store TCS food until in good repair and able to maintain temperatures at 41 degrees F or below
