Handwash sinks shall be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. Facilities shall be maintained in a condition that promotes handwashing. Person in charge (PIC) provided hand drying provision for handwash sinks at time of inspection. Corrective Action: Corrected at time of inspection.

Observed multiple small bugs inside bag of cinnamon and contacting the cinnamon. All food shall be in good condition, safe, and unadulterated. All adulterated cinnamon was discarded by PIC due to contamination from small bugs. Discussed increased monitoring of cinnamon and flour for signs of contamination. Corrective Action: Corrected at time of inspection.

Observed raw shelled eggs stored above cheese in lower prep cooler compartment. Observed package of raw bacon stored above croissants in two-door cooler next to prep cooler. All raw animal proteins shall be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw shelled eggs and raw bacon according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code.
