Observed three soups being hot held. Eggplant, Spanish, and Bean soup- all measured with internal temperatures ranging between 102-120. Per PIC, the soups were prepared approximately two hours ago. They were instructed to reheat the soups to 165 degrees internally and then hot hold them at a minimum of 135 degrees F internally. Reviewed hot holding Correct By: Corrected At Time Of Inspection

Observed large prep reach in refrigerator measuring with an ambient temperature of 47 degrees F. Items such as TCS salads and sauces measured with internal temperatures ranging between 46-51 degrees F. Per PIC, all items had been prepared approximately 2 hours prior to inspection. The items were moved to alternative refrigeration to rapidly cool. Reviewed cold holding nd conducting routine temperature checks. Alternative refrigeration available to operate safely. The reach in cooler will not be used to store TCS food items until in good repair. Correct By: Corrected At Time Of Inspection
