Inspector's notes

Observed several wet wiping clothes on the counter, under clean drying dishes. According to PIC, the clothes are being used to absorb water from the drying dishes and are laundered weekly. Discussed using a non-absorbent mat. Wiping cloths, especially when moist, can become breeding grounds for pathogens that could be transferred to food. Any cloths that are not dry must be stored in a sanitizer solution of adequate concentration between uses. Moist cloths used for food contact surfaces shall be kept in an approved sanitizing solution. Corrective Action: Correct prior to next routine inspection.
