#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed cut lettuce, sliced tomatoes, various precooked chicken such as grilled and homestyle, and preassembled tacos cold holding in the walk-in with internal temperatures of 46-53F, probe thermometer, verified by person in charge (PIC). According to PIC, the walk-in cooler refrigeration was turned off and the door open for around 40 minutes while putting away the food order, just prior to inspection. PIC observed 41F or less in the TCS foods less than 4 hours prior to inspection. Ambient air temperature of walk-in at 41F or less. PIC uncovered or vented all TCS foods to rapidly cool to 41F or less. Discussed the importance of maintaining cold food at 41F or less to limit pathogen growth and avoid causing foodborne illness. Except during preparation, cooking, cooling, or when time is used as a control all TCS food must be maintained at 41°F or less. Corrective Action: Corrected at time of inspection.
