Inspector's notes

Observed container of sauce in the bottom of the pizza cooler with an internal temperature of 60*F when measured with a probe thermometer. According to employee, sauce container was left out for about 30 minutes while pizzas were being made. Observed chicken wings in the sandwich cooler with an internal temperature of 54*F. According to employee, lid on the cooler was left open while sandwiches were being prepared. Except during preparation, all TCS foods must maintain internal temperatures of 41*F and below. Items were moved to the walk-in at time of inspection to rapidly cool. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed cooked chicken wings sitting on sheet trays at room temperature with internal temperatures around 80*F when measured with a probe thermometer. According to employee, wings had been cooked about an hour and a half prior. Discussed cooling methods. All hazardous foods must be cooled from 135-70*F within 2 hours, and from 70-41*F within the next 4 hours for a total of 6 hours. Discussed only letting wings sit out for about 30 minutes maximum before placing them in the walk-in to cool to ensure cooling parameters are met. Wings were moved to walk-in to continue cooling at time of inspection. Corrective Action: Corrected at time of inspection.
