Per employees, salmon used for sushi is treated for parasites in house via freezing however logs for this process were not complete. Upon further questioning it was revealed that fish is actually treated for parasites (farm raised in pens, parasite free pellet fed) by distributor. A parasite destruction letter was produced for verification at time. Please ensure salmon used for sushi is treated for parasites and the required documentation (logging of in house treatment or verification letter from distributor) is available at all times.
