Observed in use utensils stored in water on the flat top grill that was not in use. The water measured 109*F with inspector probe thermometer. Discussed with Chef that when holding in use utensils they should stored either in running water, water that is maintained at 135*F or higher, or use time as a control. Corrective Action: Corrected at time of inspection.
