Oil and garlic stored on food prep table at 60 degrees F. Item was placed in ice water to cool rapidly to 41 degrees F. 10 Bags of shredded cheese, 1 bag of precooked sausage stored at 60 degrees F in reach in cooler. PIC stated items were delivered this morning and stored on the floor less than 2-3 hours ago and PIC stored them in fridge less than 2 hours ago. PIC was instructed to store the items in reach in cooler for rapid cooling. Items were stored in freezer and reached proper temperature.
