Recommended ice bath cooling items for long periods before placing in double door fridge to expedite cooling process. Item pulled and re iced. Corrective Action: Corrected at time of inspection.

Observed pork rinds at 72F, cooked beef at 45F, and raw beef at 52F in the reach-in fridge with tight lids and wrapped tightly in cling wrap. The PIC indicated that the food was recently placed in the cooler from ambient, less than an hour prior to inspection. All TCS food products must be cooled in a method that allows for rapid cooling. The PIC removed the lids and wrapping from the food products and placed in the freezer to cool down to 41F. Correct By: Corrected At Time Of Inspection
