Observed greyish organic material built-up on the top trays of the commercial ice machine. Informed manager about the organic build up and educated on cleaning frequency. Manager informed staff not to use ice from the machine until the unit is cleaned. Manager started to defrost the unit and plans to clean it at close. Corrective Action: Correct prior to next routine inspection.
