During inspection observed the sides of the prep tables to contain an accumulation of food debris/residue. The inner wells of a empty hot holding unit in the prep area were also observed to contain an accumulation of food debris/residue. The person in charge stated they would clean the equipment. Ensure all equipment, food contact surfaces, and non-food contact surfaces are cleaned and maintained clean at all times. Corrective Action: Correct prior to next routine inspection.
