Inspector's notes
Observed two walk-in refrigeration units without lighting at the time of inspection. The light intensity shall be at least 108 lux (10 foot candles) at a distance of 75 cm (30 inches) above the floor, in walk-in refrigeration units and dry food storage areas and in other areas and rooms during periods of cleaning. Per PIC, they have a work order in to get the lighting fixed in the units. Corrective Action: Correct prior to next routine inspection.

Inspector's notes
Observed establishment to have no hot water available. Water at handwashing faucets measured 68°F on a calibrated probe thermometer. No food preparation was occurring during time of inspection. Establishment was only selling ready-to-eat bakery and deli items and will not be resuming food preparation until the water heaters are fixed. Maintenance was already at the establishment replacing water heaters. Hot water of: 100°F is required at all handwash sinks; 110°F at all other sinks; 120°F at mechanical warewashing units sanitizing with chemicals; and 140°F at mechanical warewashing units sanitizing with high temperature. Provide adequate hot water at all sink fixtures prior to re-inspection on 01/10/2025. Corrective Action: Correct prior to re-inspection on 01/10/2025.

Observed that the dishwasher in the bar tested at less than 25ppm for chlorine sanitizer. A concentration of 50ppm to 100ppm is required to properly sanitize wares. Only those poisonous or toxic materials that are required for the operation and maintenance of a food establishment, such as for the cleaning and sanitizing of equipment and utensils and the control of insects and rodents, shall be allowed in a food establishment. ** This does not apply to packaged poisonous or toxic materials that are for retail sale purposes. The PIC discarded the insecticide at the time of this inspection. Core-7-209.11, C: Storage-Other Personal Care Items Observed employee clothing being stored on shelves in multiple areas of food and supply storage throughout the bakery. Except for properly stored refrigerated medicines and first aid supplies, lockers or other suitable facilities shall be provided for the orderly storage of employees' clothing and other possessions.
